Keto Low carb thai BBQ chicken for day two of Keto reset, I’m feeling Thai food (again)! Using the same ingredients for the Pad Thai Noodles, I marinaded the chicken thighs for 2 hours but instead of grilling I decided to bake them. The flavors of tamarind, lime, fish sauce with a hint of sweetness made for a juicy chicken with a crispy crust.
INGRIDIENT for Keto thai BBQ chicken
- 2 garlic cloves grated
- 2 Tbls tamarind paste
- 1/2 tsp chili pepper flakes
- 1/4 cup allulose
- 1 Tbls Fish sauce
- 2 Tbls soy sauce or coconut aminos
- 1 Tbls lime juice
INSTRUCTIONS:
Mix together and marinade bone in, skin on, chicken thighs for at least two hours. Preheat the oven to 350 degrees and bake for 40 to 60 minutes depending on the size of your chicken thighs. For this meal the bake time was only 40 minutes because the thighs were small. Serve with cauliflower rice or Pad Thai. Enjoy!
