Keto Spinach and cheese stuffed cauliflower patties – easy to make and fun to eat, these mini cauliflower and mozzarella patties are great for both kids and adults.

Ingredients for Keto Spinach and cheese stuffed cauliflower patties

  • 1 head of Cauliflower
  • 2 eggs
  • 1/2 cup Parmesan
  • 1/2 cup Mozzarella
  • 1/2 tbsp salt
  • 1/2 tbsp pepper
  • 1/2 tbsp red pepper flakes
  • 1/2 tbsp parsley
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • spinach (optional)

INSTRUCTIONS:

  1. Preheat oven to 400f (200c)
  2. Cauliflower in food processor
  3. Cover with film, pierce + microwave for 4 mins Don’t burn self.
  4. Use cloth to squeeze out moisture and form a dough
  5. In a bowl mix with 2 eggs. 1/2 a cup of parmesan, and 1/2 cup of mozzarella and 1/2 tbsp salt, pepper, red pepper flakes, parsley, garlic powder, onion powder
  6. Shape half a pattie and add grated cheddar (?) and spinach and enclose with more dough
  7. Bake 20 mins
  8. Flip and bake 15 mins
