Keto Mexican Cheesy Beef Skillet
This KETO MEXICAN SKILLET RECIPE starts with seasoned beef, cauliflower rice, and plenty of bold, Mexican flavors. This dinner is quick to get on the table and the family will enjoy it too!
Ingridient for Keto Mexican Cheesy Beef Skillet
- 1 lb Ground Beef
- 1/2c Water
- 1 pkg Fajita Seasoning
- 1/2 bag frozen peppers & onions or 1 bell pepper sliced and 1/2 small onion sliced
- 3 tbsp Rotel
- 1 cup steamed cauliflower rice
- Salt and pepper to taste
- 1 cup shredded Colby Jack Cheese
- 1 Jalapeno, sliced
- Fresh tomatoes for garnish (optional)
INSTRUCTION:
1)- Preheat oven to 350F
2)- In a medium cast iron skillet, brown Ground Beef and drain excess grease.
3)- Add salt & pepper & Heat cauliflower rice
4)- Add Fajita seasoning and water, mix well.
5)- Add frozen peppers & onions, stir in.
6)- Stir in rotel.
7)- Stir 1 cup of Cauliflower Rice in to ground beef mixture.
8)- Sprinkle cheese over the top.
9)- Top with jalapeños.
10)- Heat for 20 min or until cheese is melted. Enjoy
